4 tbsp sesame seeds
2 tbsp cooking sake
1.5 tbsp soy sauce
2 tbsp sugar (optional)

Boil the spinach in a large pot of water for 1-2 minutes or until it has turned a rich green in colour and wilted.
Remove spinach from pot and blanch in ice water. Drain and lightly squeeze spinach to remove any excess water. Cut into 5-6cm long strips and set aside.
Place sesame seeds in a blender, food processor, or suribachi mortar and pestle, and grind into a rough powder. Add the (optional) sugar and mix well. Add the soy sauce and cooking sake to the sesame mixture and mix until combined.
Dress the spinach with the sesame seed, soy, and cooking sake sauce and then garnish the top of the dish with any leftover whole sesame seeds.
