七味粉烤豆腐荞麦面沙拉

材料

salad:
• 1 teaspoon pine nuts
• 1 teaspoon white sesame seeds
• 200g dried soba noodles
• 340g firm tofu, cut into small cubes
• salad greens


dressing:
• 3 tablespoons soy sauce
• 2 tablespoons sushi vinegar
• 2 teaspoons squeezed lemon juice
• 2 teaspoons fresh grated ginger & juice
• 1 tablespoon sesame oil
• 2 tablespoons olive oil
• 2 shiso leaves, finely chopped
• 1/2 teaspoon shichimiya premium shichimi pepper

做法

  1. Toast the pine nuts and sesame seeds in a non oiled pan over low heat until golden, shaking the pan regularly.

  2. Combine all dressing ingredients and whisk well until the ingredients are fully incorporated.

  3. Bring a large pot of water to a boil. Add the soba and cook according to the package instructions. Drain and rinse under cold running water until soba noodles are completely cooled. Drain and set aside.

  4. Microwave the tofu for 1 minute and drain the excess water. Season the tofu with a pinch of salt, toss with vegetable oil, and pan-fry in a skillet over medium-high heat for a few minutes, tossing every so often until the pieces are browned on all sides.

  5. Toss the soba and dressing until they are well combined. Add the tofu and seeds, and toss again gently. Garnish with salad greens. Sprinkle extra Shichimiya Premium Shichimi and serve.

小贴士

-If you don’t have all the ingredients for the dressing or don’t want to spend too much time to make the dressing you can use shop bought chuuka dressing or diluted mentsuyu sauce.
