Rinse the mochi rice well and leave to sit for half an hour.
Add the coconut milk and rice to a pan and bring to the boil. When it reaches the boil, reduce the heat and let it gently simmer for 15 minutes.
Remove from the stove and leave to stand for another 15-20 minutes to let it finish steaming. In the meantime, prepare your fruits.
When your rice is cool enough to handle, form into rectangular lozenges, then top with your fruit. Enjoy.
