Welcome in the New Year with classic Japanese New Year delicacies, such as this Kohaku Namasu carrot and daikon salad. Also known simply as 'Namasu', this tasty side salad consists of shredded daikon mooli radish and carrot pickled in a sweetened vinegar dressing. The name 'Kohaku' translates to mean 'red and white', which are Japan's colours of celebration, as well as the colours of this dish.


1/3 daikon raddish
1/2 carrot
30g sakiika dried squid jerky (optional)

amazu dressing:
4 tbsp rice vinegar
2 tbsp sugar
2/3 tsp salt
