Ge dina grönsaksrätter en extra umamiboost med hjälp av detta enkla recept på inlagda grönsaker (asazuke). Shio koji fungerar som en inläggning i detta recept och bryter ner stärkelsen och proteinet i grönsakerna till socker och aminosyror. Genom att låta grönsakerna ligga i inläggningen under en kortare tid bevaras deras smak, samtidigt som umami och en gnutta sötma tillsätts.

Ingredienser

1 english cucumber
1/3 carrot
50g daikon radish
1 red radish
2 tbsp shio koji
1 tsp kombu dashi liquid

Så här gör du

  1. Prepare the vegetables by slicing and cutting everything but the red radish into small matchsticks. Slice the red radish in half.
  2. Mix the shio koji and the kombu dashi together.
  3. Put all of the ingredients into a bowl and mix until evenly coated with the shio koji mixture.
  4. Wait 10-15 minutes for the vegetables to pickle slightly.
  5. Serve as a side to any Japanese meal .
