Preheat the oven to 180°C and line a large, flat baking tray with baking paper.
Rehydrate the soy beans by soaking them in 480ml water for 8-12 hours. They should expand fully. Rinse well and dry lightly with kitchen roll.
Transfer beans to large bowl and add sesame oil. Toss lightly until the beans are nicely coated. Add salt and your favourite seasonings, then toss lightly again.
Scatter soy bean mixture on baking tray in a single layer. Transfer to preheated oven for fifteen minutes, then take out the tray, stir the beans around, and return to the oven.
Take out the tray and stir the beans around every five minutes for 10-30 minutes, or until the beans are cooked. The time this takes will depend on how much moisture the beans absorbed while soaking, but when they are done they will take on a brownish gold colour.
Allow them to cool down, and enjoy.
- These soy beans are delicious without any extra seasonings. But if you would like some variety, try the following flavours: Salt & Vinegar (add a tablespoon of vinegar), Yuzu Koshu (add 1/2 teaspoon yuzu pepper paste), and Seven Spice (add 1/4-1/2 teaspoon nanami togarashi).
