Yokan is a traditional Japanese dessert that has been around for hundreds of years. Originally imported from China, yokan used to be made with boiled sheep gelatin, but has over the years come to be made red bean paste, agar and sugar instead. Yokan have a traditionally very sweet taste and are often served at tea ceremonies to contrast the bitter matcha green tea.

Yokan is brilliant for:
• Drinking with sencha green tea for a traditional and refreshing snack.
• Cutting into smaller blocks and sharing with friends on cocktail sticks.
• Buying as a traditional Japanese gift.

I enjoy Japanese jelly cake and this one fits the bill. It is a large portion so needs cutting up to serve.
