The tremendous talents of Ishikawa's famous Noto brewers are put on exquisite display with the delights and aromas discovered in this crisply crafted junmai ginjo sake. Made with the carefully harvested Yamada Nishiki sake rice grain of Hyogo prefecture fame, Sogen brewery uses its simple yet meticulous techniques , as well as the addition of soft spring water from Kurofumi mountains, to draw out the refined flavour qualites of this rich grain and carefully balance them into the exquisite palate of this delicate sake. Brewed and polished to a smooth consistency to make the surprising umami depth all the easier to enjoy, this sake delivers creamy, luscious and fluffy notes of caramel, cocoa and steamed rice that encourage the nose into a pleasant, swelling sip of a heavy and deep body, before it lightly finishes on an invigorating, clean rice finish. Versatile enough to experience chilled or lightly warm, this sake rarely goes amiss when there's rich dishes to pair with its finely measured taste.
