Put a tropical twist on your nigiri with these sweet sushi pieces. Made with slices of fresh fruit placed atop sweet, coconut infused mochi rice, sweet sushi makes an impressive party finger food or sweet, cool, summery afternoon snack.


• favourite fruits
• 100g mochi rice
• 100ml coconut milk
• 70g sugar


  1. Rinse the mochi rice well and leave to sit for half an hour.

  2. Add the coconut milk and rice to a pan and bring to the boil. When it reaches the boil, reduce the heat and let it gently simmer for 15 minutes.

  3. Remove from the stove and leave to stand for another 15-20 minutes to let it finish steaming. In the meantime, prepare your fruits.

  4. When your rice is cool enough to handle, form into rectangular lozenges, then top with your fruit. Enjoy.
