Welcome in the New Year with classic Japanese New Year delicacies, such as this Tazukuri candied sardines. Traditionally eaten as part of 'Osechi ryori', this popular side dish consists of roasted baby sardines coated in a sweet soy sauce glaze and symbolises bountiful harvest. The name 'Tazukuri' translates to mean 'making rice paddies', as sardines were once used as fertilisers for rice fields.

材料

80g dried baby sardines
1 tbsp mirin
1-2 tsp soy sauce
1 tbsp toasted sesame seeds (optional)

手順

  1. Toast the dried sardines in a frying pan on medium heat until crispy. Be careful not to burn them.

  2. Add the soy sauce and the mirin to the sardines, and toss until evenly coated. Remove from the heat. Allow to cool.

  3. Top with roasted sesame seeds if you would like to add some nuttiness to the dish. Serve with other osechi dishes for New Year's.
