Desserts do not come much easier, or much more unique, than this edamame recipe. Edamame are immature soy beans that are generally sprinkled with salt and eaten as an appetiser, or combined with rice or pasta. In this recipe, however, the edamame are combined with soy milk, sugar, and a little soy sauce (if you so wish) to make a sweet bean paste which is then spooned over boiled or baked mochi rice cakes. This dish, known as 'Zundamochi' in Japanese, is a specialty dish from Sendai, in Japan's Tohoku (North-East) region. 

材料

230g edamame soybeans, in pods
50ml soy milk
30g sugar
soy sauce, to taste
4-5 mochi cakes, boiled/baked

手順

  1. Boil the edamame in the pod. Drain and leave to cool.
  2. Take the beans out of the pod.
  3. Put the beans, sugar and soy milk into a food processor and blitz until smooth.
  4. Add a little soy sauce for a twist if you want to add some salty and umami flavours.
  5. Serve on top of some boiled or baked mochi and enjoy.

料理のコツ

-You can use the paste as a topping for pancakes, just add some whipped cream to the paste and serve on top of the pancakes. This can also be used as a filling for dorayaki.
