When the day outside is far too warm for a hot udon soup, these zaru tray udon are just the trick. A classic combination of freshly prepared and cold served udon noodles, chilled and flavoursome mentsuyu soup base, and your favourite spicy or savoury Japanese garnishes, this dish is the perfect light yet filling way to stay cool during the warmer months.

Prepare your udon noodles as per the package. After cooking quickly run them under cold water to make sure you retain the chewiness of the noodles.
When the noodles are cool, drain completely.
Place the noodles on top of a zaru tray. Prepare the mentsuyu according to the directions on the bottle to dilute.
Serve with your favourite toppings by taking the cold noodles and dipping them in a cup of the mentsuyu. Be sure to slurp the noodles for authenticity. It is seen as a complement to the chef to slurp noodles in Japan.
