Add intense and complex savoury/umami flavour to your salads with this salad dressing, which is made with shoyu (soy sauce) koji. Koji, also known as 'rice malt' or 'rice mould', is an edible fungus that grows on rice and is used as a seasoning in Japanese cuisine, the natural enzymes bringing out sweet and savoury flavours. Try this dressing on any leafy or green salad and taste the difference.

材料

1 tbsp shoyu koji
1 tbsp sugar
2 tbsp vinegar
1 tbsp olive oil
1 tsp finely grated ginger

手順

  1. Whisk all ingredients together in a bowl.
  2. Serve over your favourite salad
