Ponzu is a type of dressing made by combining soy sauce, vinegar, and citrus fruit juice. It has a dynamic and refreshing flavour that goes extremely well with delicate umami foods. This recipe turns ponzu into a thick jelly sauce ideal for pouring or spooning heartily over oysters, broccoli, or thinly sliced rare meats.

材料

80ml shibanuma ponzu yuzu katsuo
5g powder gelatin
80ml water

手順

  1. Mix the gelatin and water in a pot over a low heat until the gelatin is fully dissolved. Take the pot off the heat and add the ponzu.
  2. Pour the liquid into a wide flat tin or tray and cool in the fridge for about an hour or until it hardens.
  3. Once the jelly is set, finely chop it up with a knife and serve.
