Taste the flavours of Autumn with this sweet potato yokan dessert recipe. As traditional as Japanese desserts come, this sweet treat combines sweet potatoes with sugar for sweetness, salt and vinegar for flavour balancing, and agar for gelatinising without the need for gelatin. These moreish treats are best enjoyed after dinner with a cup of hot green tea.

材料

500g sweet potatoes
5g kanten agar
100g sugar
dash of rice vinegar

optional add-ins:
candied sweet potato
raisins
sugared azuki beans

手順

  1. Chop up the sweet potato and leave to stand for 1 hour in water with a dash of rice vinegar added.

  2. Remove the sweet potato from the water and microwave until soft, then blend.

  3. In a pan add 500ml of water and the kanten agar, then gently warm. Once the kanten has dissolved immediately add the sugar.

  4. Once the sugar has dissolved, add the mashed sweet potato. Simmer for 4-5 minutes while stirring to thoroughly combine. Be careful not to burn the mixture.

  5. Pour the mixture into your mould of choice and leave to set. If you like you can include add-ins like sweetened red beans at this point for a more interesting texture/taste. Chill in the refrigerator for about an hour till firm.

  6. Once firm cut into bite sized pieces and serve with a nice cuppa or coffee.
