• 1 tbsp cooking sake
• 1 tbsp sugar

Cut the potatoes into bite sized pieces and rinse well with water.
In a pan, warm some vegetable oil before adding the chicken mince. Pan fry until the mince separates, then add 1 cup of water and skim off any scum when it reaches the boil.
Add the potatoes, soy sauce, mirin, cooking sake, sugar and ginger.
Cover and cook over a medium low heat for 7-8 minutes. Serve and enjoy.
