Hiyamugi (literally meaning ‘cold wheat’) are long, flat and thin, and they are generally served on top of a bed of ice with tsuyu dipping sauce and assorted garnishes. Cold noodles in a jiffy!
• Add the noodles to boiling water (1L water for 1 bunch noodles).
• Cook for 4-4.5 minutes, then drain and wash the noodles in cold water.
