Noodles are one of the staples of Japanese cuisine, being the most commonly consumed carbohydrate after rice. When the weather gets warmer, hot ramen and udon soup dishes are replaced with zaru bamboo trays and bowls of ice loaded with cold soba, somen and hiyamugi noodles with side dishes. Interested in trying some cold noodle dishes for yourself? Then take a look at japancentre.com’s cold noodle range.

• Add 100g noodles to a pan of 1L boiling water. Adjust the noodles as they soften until they are fully submerged. Let boil for 4 minutes.
• When finished, strain and rinse with cold water to cool down.
• Serve with a tsuyu dipping sauce and assorted garnishes.
