Kitsune, meaning “fox”, is one of the most popular flavours of noodles out there. The fox spirits of Japanese folklore apparently loved the taste of fried tofu, and it therefore came to pass that this udon dish was named 'kitsune udon', in honour of the fox. • Peel lid back to about halfway and take out the powdered soup and shichimi spice sachets.
• Add powdered soup and fill bowl with water up to the line on the inside of the bowl. Leave for five minutes.
• Remove lid completely, sprinkle the shichimi spices on top, and enjoy!
