Tsukemen noodles are something like the cold noodle equivalent of hot ramen bowls. Tsukemen are usually enjoyed during the summer months, with the noodles served on a ‘zaru’ bamboo wood tray or on top of a bed of ice, and the hot dipping soup served in a small, separate side bowl. • Add one bunch (130g) noodles to 2L boiling water on the stove. Loosen until noodles are completely submerged and allow to cook for 10-12 minutes.
• Meanwhile, dilute 1 sachet of soup with 120ml boiling water to make the dipping soup.
• When noodles are done, strain and cool by rinsing in cold water.
• Serve noodles on a zaru tray or plate, with ice cubes for extra coolness. Serve with dipping soup on the side, and add your favourite meat and vegetable toppings as desired.
