The tremendous talents of Ishikawa's famous Noto brewers are put on exquisite display with the delights and aromas discovered in this finely balanced junmai sake. Made with the carefully harvested Yamada Nishiki sake rice grain of Hyogo prefecture fame, Sogen brewery uses its simple yet meticulous techniques , as well as the addition of soft spring water from Kurofumi mountains, to draw out the all round flavour qualities of this nutritious grain into the expansive and strong palate of this full-bodied, crisp sake. Brewed into a natural mash without the addition of further alcohol or sugars, the umami consistency of the polished, delicate rice is really allowed to shine, delivering creamy, luscious and fluffy notes of caramel, cocoa and steamed rice that do well to entice the nose, before they surprise you with voluminous mouthfeel and a refreshingly clean, traditional finish. Best served lightly warm (40℃) to savour the depth of each raw flavour, this dry sake offers the perfect excuse to indulge in equally rich food alongside it.
