Carefully nurtured and dried in the local fields of Miyazaki, Michimoto ensures these pickled takuan daikon radish come packed with nothing but sharp natural flavour and quality. Sliced delicately thin to produce a suitably light palate cleanser or topping, these pickles are expertly prepared with just the right sprinkling of sugar and salt, before they are left to mature in a naturally-made rice bran and vinegar pickling agent for 4 to 12 months. Pressed under stone weights so the unique drying process keeps them sublimely crisp, these pickles carry a saltier umami taste, thanks to inclusion of soy sauce during pickling.
