背景

Tsuyu is one of the most handy ingredients to have in any Japanese pantry, as it is essentially three of the most important seasonings in Japanese cuisine rolled into one. A combination of dashi for umami, soy sauce for saltiness (and a little extra umami), and mirin rice wine for sweetness, a bottle of tsuyu is often all you need to bring Japanese flavour to a wide variety of dishes. 使い方

• Dilute 1 part tsuyu with 3 parts water and use as a dip for cold noodles
• Dilute 1 part tsuyu with 6-8 parts water and use as a soup base for hot noodles
• Dilute 1 part tsuyu with 3-4 parts water and use as a dressing or seasoning for donburi dishes or tempura
• Dilute 1 part tsuyu with 8-10 parts water and use as a soup base for oden and other nabe hot pot dishes
• Dilute 1 part tsuyu with 4-6 parts water and use as a liquid stock for nimono stewed dishes
• Use undiluted to season vegetable stir fries, cold tofu, or natto
