Pancakes are immensely popular in Japan. Unlike the thin crepe-style pancakes available in the UK, Japanese pancakes are thick, fluffy, and spongy; more similar to an American style hotcake. Serve these pancakes with the classic butter and maple syrup combination, or cover with sweet azuki red beans or black sugar syrup for a more authentic Japanese touch.


• In a bowl, add the entire packet of pancake mix and 140ml water (or 150ml milk). Mix together to combine and allow to rest for approx. 10 minutes.
• Heat up a frying pan over a medium heat. Pour 1/4 pancake batter into the frying pan to make a circle shape. Allow to cook for approx. 2.5 minutes (2 minutes if the batter is made with milk).
• When you can see air bubbles forming on the uncooked surface of the pancake, flip the pancake over and allow to cook for a further 2 minutes or until cooked. To test whether it is cooked or not, insert a skewer into the middle of the pancake. If the skewer comes out clean, the pancake is ready.
• Repeat Steps 2 and 3 to make four pancakes.

Good general pancake mix. Doesn't rise as much as wheat based mixes, but high in fibre.
Handy small packets, higher in fibre but easy to digest type of fibre if you have Gastro issues, makes a tasty pancake! Blends well with regular full fat milk, water or soy - I've found it difficult to find such a version with easily digestible fibre that produced good results in supermarkets of health food shops!
