A delicious and wonderful take on spareribs with the added flavour of sake.

500g lean pork spareribs, cut into 5cm pieces
pinch of salt and pepper
1 tbsp sunflower oil
2.5 cm piece fresh root ginger, peeled and finely chopped
1 garlic clove, thinly sliced

for the sauce:
2 tbsp clear honey
2 tbsp rice vinegar
1 tbsp light soy sauce
1 tbsp dark soy sauce
4 tbsp gekkeikan sake
1 tbsp brown sauce


  1. Mix all the sauce ingredients together and set aside.
  2. Sprinkle the spareribs with salt, black pepper and 1 tablespoon of Gekkeikan sake.
  3. Heat the oil in a non-stick wok and add the ginger and garlic.
  4. Stir fry over moderate heat for 30 seconds.
  5. Add the spareribs and stir fry for 5 minutes, until golden brown. Reduce heat and cook gently for 10 minutes.
  6. Add the sauce to the wok, cover and simmer gently for 25-30 minutes.
  7. Garnish with "fire-flowers" from birds eye chilli if available.
  8. Serve with boiled Jasmine fragrant rice.
