A childhood favourite with a Japanese twist, this recipe for Japanese mini pizzas will make you feel like a kid again. These pizzas are made by creating rice 'bases' with pressed rice, then topping these bases with plenty of minced beef, cheese, and a sauce of miso, mayonnaise and tsuyu soup base for a little authentic Japanese flavour. Enjoy as a post school/work snack, or enjoy a couple during the day as part of a bento lunch.


300g cooked rice
80g cooked beef mince
1 tbsp white miso
1 tbsp mayonnaise
1 tsp tsuyu noodle soup base
3-4 melty cheese slices


  1. Mix the miso, mayonnaise and tsuyu into a smooth paste for the sauce base. Set aside.
  2. Make 3-4 flat round rice patties, using 75-100g for each patty. Place the patties on an oven tray.
  3. Spread the sauce base onto the rice patties and put a melty cheese slices on top of each patty.
  4. Put roughly 20g cooked beef mince on top of each cheese slice, then grill in the oven until the rice has crisped and the cheese has melted (about 3-5 mins).
  5. When the rice patties have finished, sprinkle finely chopped chives on top and serve.
