Try something different on your pizza with this recipe for mini pizzas with miso. Liquid miso is used instead of the standard tomato paste as the sauce, giving the pizzas a strikingly different (but no less delicious) nutty flavour quality. The liquid miso also contains dashi soup stock for pleasing hints of umami. These pizzas are ideal for enjoying as a morning or afternoon snack.


1 tbsp liquid miso with dashi
2 english muffins
1/4 onion
1 small aubergine
4 cherry tomatoes
3 padron peppers
melty cheese for topping


  1. Slice the English muffins in half. Thinly slice the onion. Slice the aubergine in half and then slice into thin half moon rounds. Slice the tomatoes in half. Thinly slice the padron peppers.
  2. Place and distribute the vegetables amongst the muffin slices evenly. Spread 1/4 of the liquid miso on top of the vegetables on each slice. Top with the melty cheese. 
  3. Preheat the grill on the oven. place the muffin slices on a baking sheet, and put under the grill for 2-5 mins until the cheese melts. Remove and allow to cool slightly. Enjoy.
