Enjoy a delicious seafood tapas dish with a unique Japanese twist, courtesy of this easy Squid Al Ajillo recipe. ‘Al ajillo’ means ‘with garlic’, and this recipe combines the aromatic qualities of garlic, as well as rosemary and chilli pepper, with the savoury/umami qualities of fresh squid and Japanese koji miso. Serve as an entrée or as part of a tapas feast.


100g thinly sliced squid
1 clove diced garlic
1 chili pepper
2 tbsp koji miso
1 sprig rosemary
3 tbsp olive oil

to serve:
baguette slices


  1. In a small saucepan heat the olive oil, garlic, chilli pepper, and rosemary on medium heat until the garlic is browned (approx. 6-8 mins).
  2. Add the squid and koji miso. Stir fry for a further 2 mins.
  3. To serve, place on top of baguette slices.
