Make the salad the tastiest part of the meal with this unique yet effortless gobo burdock root salad. Gobo (burdock, in English) is a root vegetable with a sweet, mild flavour that can be substituted for or used alongside carrots and turnips. This salad involves combining lightly boiled burdock and carrot slices with a savoury sauce of soy sauce, mayonnaise, and sesame oil. Enjoy this flavoursome side dish with grilled beef or chicken.


2 gobo burdock roots
1 carrot

2 tbsp ground white sesame seeds
5 tsp mayonnaise
4 tsp vinegar
1 tbsp soy sauce
2 tsp sugar
1 tsp sesame oil


  1. Mix all the ingredients for the dressing in a bowl and put aside.
  2. Wash the gobo and carrot and remove the skin with a peeler or the edge of a knife.
  3. Cut the gobo and carrot into thin strips.
  4. Put the gobo in a saucepan with enough water to cover it. Bring to the boil. Boil for a minute and then add the carrot and boil for another minute.
  5. Strain the gobo and carrot and leave to cool.
  6. Add the gobo and carrot into the dressing bowl and leave for 30 minutes before serving. Be sure to give the salad one more stir before serving.
