Get creative with chirashi sushi and turn it into a masterpiece with this simple recipe for moulded chirashi sushi for hinamatsuri (the Japanese Doll’s festival). A different take on a Japanese favourite, this recipe uses the signature colours and flavours of chirashi sushi and arranges them into ornate flower shapes ideal for serving as a side dish or snack during hinamatsuri, or any other appropriate occasion.


cooked rice
chirashi sushi mix
kinshi tamago (thinly sliced egg omelette)
ikura (salmon roe)
sakura denbu (pink seasoned ground fish)
cucumber slices


  1. Prepare the sushi rice by mixing the chirashi sushi mix and cooked rice according to the package.
  2. Once the rice is ready, get a rice mould (preferable a flower-shaped mould if possible) and fill it with the rice. Press the rice firmly so that it fills in the shape of the mould.
  3. Turn out the rice from the mould. Take extra care not to damage the shape of the rice.
  4. Decorate the rice with some toppings such as egg omelette strips, sakura denbu (if available), smoked salmon, salmon eggs and sliced cucumber. Enjoy.

- If sakura denbu is not available, you can use boiled cod fillets, roughly 2, and then pulse them in a food processor. Then in a frying pan place the processed cod, and 1 tablespoon of mirin and cooking sake, and a little salt. Add some red food colouring and cook until all the water has evaporated from the boiled cod and it becomes nice and fluffy. Then add about 30g of sugar to give it that authentic sakura denbu taste.
