La minestra dolce di azuki è un'idea per un dessert diverso dal solito.   1. Start by adding the azuki and 1 cup for water to a large pan and bring it to the boil. You can adjust the amount of water depending if you prefer a thick or thin soup.

  2. You can cook the mochi in a variety of ways, but grilling them gives great results so place the mochi under a hot grill for 5-10 minutes.

  3. Once the mochi begins expanding in the grill, they are ready and can be put into serving bowls. Use two pieces per person.

  4. After the azuki and water mix has boiled, take it off the heat and pour over the mochi in the serving bowls and enjoy.

Instead of grilling the mochi, you can cook in the microwave by cooking on full power for approximately one minute, or alternatively boil in hot water for a few minutes until soft.
