Mirin-fu, mirin style seasoning, was invented after the war when the rice traditionally used to make mirin was in short supply and alcohol taxes were high. These days sweet cooking seasoning mirin style is still enjoyed for it’s low price and lower alcohol content.

• Use as an alternative to sugar in savoury recipes.
