Japanese pancakes, or hot cakes, are more similar to scotch pancakes or American flapjacks than the crepe-style pancakes preferred by the British. In Japan, these hot cakes are often served with maple syrup, sweet azuki beans or black sugar syrup.
Three deliciously thick and fluffy hot cakes? Easy!
• Add 1 egg and 100ml milk (or water) in a bowl and whisk thoroughly. Add half the packet of hot cake mix and whisk until smooth.
• Heat a frying pan over a medium heat, place on top of a damp cloth to cool a little, then add 1/3 of the pancake mix.
• Heat on a low flame for about 3 mins till bubbles form on the top. Flip the pancake and cook for a further 3 minutes until brown on both sides and slide onto a plate. Repeat twice more with the rest of the batter, turn off the heat, and enjoy!
