Pork belly is a highly versatile ingredient in Japanese cuisine. It is used from a wide range of dishes, including hearty, slow-cooked stews, quick and easy stir fry dishes, and boiled hotpots. With pork belly containing the most fat out of all the cuts, you will find that these pork slices have a succulence to them that enhances the depth of flavour and of any dish that includes them. Perfect for shabu shabu.

A lot of dishes in Japanese cuisine require very thinly sliced meat.
