Le dashi est un ingrédient extrêmement important en cuisine japonaise car il sert de base à de nombreux plats japonais. Le véritable dashi maison est fait à base de flocons de bonite, d'algues kombu et/ou d'autres ingrédients riches en umami que l'on fait infuser dans l'eau, mais aujourd'hui de nombreux japonais préfèrent le dashi en poudre, bien plus pratique. Guide d'utilisation

• Soupe miso : 1 sachet de dashi, 4 à 5 tasses d'eau et un peu de pâte miso permettent de préparer 4 à 5 portions.
• Soupe de nouilles : 2 sachets de dashi, 5 tasses d'eau et un peu de sauce soja permettent de préparer 3 portions.
