Consisting of baby bamboo shoots, tender bracken stems, Japanese parsley and a combination of chopped Jew's ear and Enoki mushrooms, these wild vegetables are often stir-fried with rice, soy sauce and kelp dashi to create rustic sansai gohan, though can easily be served raw, boiled over noodles or pickled as a crunchy, palate-pleasing side dish.
