Fermented with brown rice to offer a warmer, more wholesome savouriness to food, this deep-flavoured miso is left to mature for long periods in wooden casks, so its wholegrain rice koji develops a smooth, fragrant taste, full of texture and free from pungent artificial flavours, alcohol or preservatives. This was such a brilliant find. I made miso soup with this paste and it was delicious. My family said the taste of my miso soup was so much more delicious than previous brands I have used. It is a little expensive but worth it.
