Sliced thick to provide a delicious source of salty seaweed goodness, these bonito flakes are freshly shaved from skipjack tuna caught and prepared off the coast of Bretagne, France, and are hand-selected to ensure the highest quality is zip-locked in each pack. Smoked as well as dried to give each matured shaving a rich, roasted essence, these bonito flakes offer a full-bodied flavour that's perfect to build your own dashi soup stock around.

Bonito fish flakes are arguably one of the most crucial basic ingredients in most Japanese cuisine. These paper-thin shavings of dried fish are the most commonly-used ingredient for making dashi; the umami-rich soup stock that goes into nearly all Japanese soups, noodle dishes, sauces and seasonings. Guide d'utilisation

To make 1,000ml of dashi broth:
  1. Bring 1,000ml of water to the boil.
  2. Add 40g of katsuobushi flakes. Place on high heat.
  3. Once it's boiling, reduce the heat and simmer for 10 minutes. Strain off the broth using a paper towel-lined sieve.
  4. Dashi broth is ready to use for miso soup, noodle soup, hotpots etc.
