For a deliciously light yet hearty salad, this prawn and avocado salad with yuzu mayonnaise recipe is hard to beat. Very fancy, but also very easy to make, the yuzu citrus flavour nicely balances the richer umami flavours of the prawn, avocado, and the mayonnaise. Whether for a refreshing summer dinner or luxurious Sunday breakfast, this salad is sure to hit the spot.


• 1 ripe avocado
• 8 cooked prawns
• melba toast
• salad greens
• 2 tbsp mayonnaise
• 1 tbsp yuzu kosho paste

How To Prepare

  1. Slice your avocado in half, scoop out the stone and as carefully as possible, remove the flesh from the skin. Slice the flesh into thin pieces.

  2. In a bowl, mix together the mayonnaise and yuzu kosho.

  3. Scatter some salad greens on a plate. Add the melba toast and top with the avocado, then the prawns. Drizzle with the yuzu mayonnaise.
