Chill out and enjoy the rich flavour of fresh vegetables with our Chilled Tomato Salad. Made using fresh tomatoes seasoned with nutty sesame and herby green perilla leaves, they’re the perfect pick me up on a sultry day.


• 2 tomatoes
• sesame dressing
•1 green perilla (aojiso) 

How To Prepare

  1. Bring a pan of water to the boil and prepare a bowl of ice water. Get your scooping spoon at the ready and pop in a tomato. After 20 seconds scoop it out and immediately put into the ice water bowl. Repeat with the second tomato.

  2. When the tomatoes have cooled down remove from the ice water and pat dry with kitchen towel. Skin the tomatoes and cut out the hard bit of the stem in the top to create a little hole.Set on a plate or bowl and sprinkle some shredded green perilla on top and pour in some sesame dressing

  3. Leave your tomatoes to chill out and absorb the flavour in the fridge for an hour or two. When you’re ready to enjoy your tomatoes cut them into slices, drizzle on some more sesame dressing and serve.
