Syrups For Kakigori Shaved Ice

Cool down during even the hottest summer days with kakigori shaved ice. Kakigori is the Japanese equivalent of a snow cone, where shaved ice is put into a bowl and topped off with a sweet syrup. These three simple kakigori syrup recipes are perfect for kakigori, but can also be used to top other desserts such as ice cream.

How To Prepare

  1. Matcha Shaved Ice Parfait
    • 2 tsp liquid matcha
    • 1 tsp honey
    • condensed milk
    • fruit
    • sweet red bean paste
    • shiratama dango (see anmitsu fruit salad)

    1. Prepare your shiratama dango and shaved ice.
    2. Mix together the liquid matcha and honey.
    3. Top the ice with the matcha sauce, condensed milk, fruit and red bean paste. Enjoy.

  2. Classic Fruit Syrup
    • 1 kiwi
    • a dash of lemon juice
    • 130g sugar

    1. In a pan heat the sugar and 1 cup of water over a low heat. Leave to one side to cool and prepared the shaved ice.
    2. Scoop out your kiwi and chop it up as small as possible. In a bowl, mix together the kiwi, sugar syrup and a dash of lemon if needed. Mush it up as much as possible.
    3. Top your shaved ice with your fruit syrup and enjoy.

  3. Umeshu Royale
    • umeshu plum wine
    • champagne

    1. Prepare your shaved ice. You can serve it in a champagne coupe for extra fun.
    2. Drizzle on some umeshu plum wine
    3. Top up with champagne and enjoy.

Tips and Information

• We used kiwi in our fruit syrup, but mandarin, blueberry and strawberry are also popular choices.
• Manual shaved ice machines are not expensive and can often be found in large toy stores or kitchen shops. If you don’t have one, these syrups are equally tasty and refreshing on crushed ice granita style.
