Get back your stamina after a draining summer's day with this chilled version of ochazuke rice soup. Made with chilled chicken stock and fluffy Japanese rice, this ochazuke is as delicious and hearty as the hot variety. If the weather is more suitable for a hot chazuke, simply heat up the chicken stock before using.

Ingredients

• 100g cooked japanese rice
• 100ml ice water
• 1 tbsp chicken stock
• chopped spring onion
• pickles
• shredded nori seaweed

How To Prepare

  1. Start cooking your rice. If you’ve not cooked rice before, you can check out our handy guides for Japanese rice or if you’re feeling super healthy, brown Japanese rice.
  2. Dissolve the chicken stock in a little bit of hot water, then add the 100ml of ice water, stir, then taste and if necessary dilute further.
  3. Serve your rice in a bowl, then pour on the chicken stock. Enjoy with your choice of garnishes. We recommend spring onion, shredded nori seaweed and some Japanese pickles.
