200g pancake mix
2 tbsp cocoa powder
6 tsp chocolate chips

In a bowl break up the tofu until becomes smooth using a whisk or blender. Add the cream and the egg and mix well.
Add the sugar next, then mix until it becomes smooth again. Finally, add the pancake mix and cocoa powder and mix well.
Pre-heat your oven to 170°C and grease up a muffin pan or cupcake liners. Pour the batter in, dividing into 8 equal portions, then sprinkle on the chocolate chips
Cook for around 30 minutes or until a skewer or knife comes out of the muffin clean. Enjoy.
• We like to add a naughty sprinkle of chocolate chips to our muffins to make them extra indulgent, but you could also use preserved chestnuts or dried fruit if you want to go the extra mile for a healthier treat.
