Combine touches of Western decadence and Japanese healthiness with this matcha parfait recipe. Similar to ice cream sundaes or knickerbocker glories, this delicious mixture of matcha ice cream, sweet azuki red beans, preserved chestnuts and chewy warabi mochi makes for a sweet and healthy dessert everybody is sure to love.


• 4 scoops matcha ice cream
• 4 tbsp sweet red beans
• 4 chestnuts in syrup
• warabi mochi
• whipped cream

How To Prepare

  1. Begin by preparing your warabi mochi and matcha ice cream. You’ll probably want to begin preparing the mochi and ice cream a few hours in advance, so relax and imagine how delicious your finished parfait will be.

  2. Getting your fanciest glass or bowl, add some whipped cream to form your bottom layer. Add the scoop of matcha ice cream, a chestnut, some cubes of warabi mochi and your red beans.

  3. Finish with a drizzle of kuromitsu sugar (from your warabi mochi kit) and enjoy.

Tips and Information

• If you don’t want to make matcha ice from scratch you can also add liquid matcha to vanilla ice cream.
