Learn how to infuse your bruschetta with a Japanese twist using dashi powder. Bruschetta is normally made up of crisp toast, a drizzle of aromatic olive oil, and fresh meat, cheese or vegetable toppings; so it is no wonder bruschetta is one of Italy’s best loved dishes. This variety adds an extra hint of umami to the mixture. Enjoy for entree or as a finger food.


• 1 tsp dashi powder
• bonito flakes
• 4 × 1cm thick slices sour dough bread or baguette
• 2 large cloves garlic
• extra virgin olive oil
• 12 diced cherry tomatoes
• 1 diced spring onion
• coriander
• pinch of chili flakes (optional)

How To Prepare

  1. Toast the bread on both sides till golden.

  2. Bruise the garlic cloves with the side of a large kitchen knife.

  3. Rub the garlic on one side of the toast and drizzle with extra virgin olive oil.

  4. Dissolve OFJ dashi powder with 1 teaspoon of hot water, then add the diced tomatoes, spring onions and mix well.

  5. Pile the tomato mixture on the toast and garnish with coriander and bonito flakes.
