Toast the bread on both sides till golden.
Bruise the garlic cloves with the side of a large kitchen knife.
Rub the garlic on one side of the toast and drizzle with extra virgin olive oil.
Dissolve OFJ dashi powder with 1 teaspoon of hot water, then add the diced tomatoes, spring onions and mix well.
Pile the tomato mixture on the toast and garnish with coriander and bonito flakes.
