Take a French classic and add a little Japanese magic, and you have this bouillabaisse avec dashi recipe. Bouillabaisse is a true classic of French cuisine; a marriage of fresh seafood, vegetables and hearty soup. This version adds dashi to the soup broth for a deeper umami flavour, and is perfect for enjoying on lazy afternoons.

• 1 tsp dashi powder
• bonito flakes
• 4 large fresh prawns
• 8 fresh scallops
• 8 mussels
• 1 clove diced garlic
• 400g daikon radish cut into bite-sized pieces
• 2 cans (100g x 2) cherry tomatoes
• 1 tbsp tomato paste
• 400ml water
• dill

How To Prepare

  1. Place a stewing pot over a medium heat. Drizzle in a tablespoon of olive oil, then add the garlic, prawns and scallops. Lightly sear on both sides, then set aside.

  2. In the same pot, add the daikon and pan-fry for a few minutes. Then add OFJ dashi powder, canned tomatoes, tomato paste and water. Simmer till the daikon is soft.

  3. Add the prawns and scallops, then bring to the boil.

  4. Season to taste with salt and pepper.

  5. Garnish with dill and bonito flakes, then serve.
