Made from sweet potato pieces covered in a sweet/savoury sauce of sesame oil, sugar, soy sauce and vinegar, daigaku imo (translating to 'university potatoes') are a favourite snack among university students, particularly during the autumn months. First wash your sweet potato with clean water and cut it into chunks.
Grab a frying pan and add the sesame oil, the sugar, the soy sauce and the vinegar, and let the mix simmer on a low heat for about 30 seconds.
Add the sweet potato chunks and let them cook for about 2 minutes on each side.
Once the chunks have taken on a caramel colour, remove them from the heat and sprinkle on the black sesame seeds.
