Make your own candied sweet potato bites, or daigaku imo, with this easy recipe. Made from sweet potato pieces covered in a sweet/savoury sauce of sesame oil, sugar, soy sauce and vinegar, daigaku imo (translating to 'university potatoes') are a favourite snack among university students, particularly during the autumn months. Enjoy these tasty treats as the nights draw in.

Ingredients

• 1 sweet potato (approx.300g)
• 1 tbsp sesame oil
• 2 tbsp sugar
• 1 tbsp soy sauce
• 1 tsp vinegar
• 1 tsp black sesame seeds

How To Prepare

  1. First wash your sweet potato with clean water and cut it into chunks.

  2. Grab a frying pan and add the sesame oil, the sugar, the soy sauce and the vinegar, and let the mix simmer on a low heat for about 30 seconds.

  3. Add the sweet potato chunks and let them cook for about 2 minutes on each side.

  4. Once the chunks have taken on a caramel colour, remove them from the heat and sprinkle on the black sesame seeds.

Tips and Information

-You can cut the potato into small size like French fries or chips so that it will be quicker to cook.
