Christmas Tree Asazuke Cucumber Pickles

A tasty and appealing canapé for your next party. These Christmas Tree Asazuke pickles are tasty, quick to make, and ever so appealing. Add a little Japanese flair to your next holiday with these Asazuke tree shaped pickles. 


1-2 cucumbers
vegetable pickle marinade
pink peppercorns and toothpicks to decorate

How To Prepare

  1. First, wash and dry your cucumbers. Cut off some rounds from the cucumbers. These will serve as the trunks of the trees. With the remaining lengths, thinly slice the cucumbers lengthwise into long ribbons with a mandolin or food slicer.

  2. Place the ribbons and rounds into a small bowl and pour on the pickle marinade to cover them about two-thirds of the way. Give it a good mix to ensure even pickling. Place into the fridge and allow to marinate for 30 mins. 

  3. Remove the pickles from the fridge and prepare a plate to present them. When taking the pieces of cucumber out of the bowl ensure that you allow them to drain a little to get rid of any excess marinade. Place the rounds on the plate first. Then take a ribbon and carefully place it on top of the round and then begin to fold it over itself. Start out with longer folds, and work progressively up into shorter folds. You may need a couple of ribbons to accomplish this based on the length of your cucumbers. Insert a toothpick through the middle of the folded ribbons into the round base. Move the folds up the toothpick length to space them out and give your tree some height. Repeat for all remaining rounds and ribbons. Place a peppercorn on some of the layers to serve as ornaments on your tree. 

  4. Serve as a tasty and appealing appetiser, or as canapés during your next Christmas party.
