Sushi for omelette lovers. This fukusazushi is a traditional spring time treat typically eaten during hanami or during the Children's Day Festival. It can be any way you like, so use your favourite vegetables and meat to add flavour to your sushi rice, and then wrap it in a thin omelette to make this sushi a fun and tasty treat to celebrate with your loved ones. 

Ingredients

400g prepared and seasoned sushi rice
vegetables and meat as desired, we suggest carrots, shiitake mushrooms, bamboo shoots, prawns, roasted sesame seeds, red pickled ginger

for the omelette:
6 egg
pinch of salt
2 tbsp water
2 tbsp katakuriko potato starch

to garnish if available:
blanched mitsuba or nori seaweed strips

How To Prepare

  1. First, let’s prepare our sushi rice. Prepare your rice according to your favourite method, and add seasoning ingredients to make sushi rice. See our how to make sushi rice recipe if you don’t have a method already. Next, add your desired ingredients. We suggest that you cook all your vegetables and any meat and season if desired. Then mix all your vegetables and meat with the sushi rice and set aside.
  2. Now to prepare the omelette. Prepare a medium to large frying pan and place on medium high heat. Let the pan heat up while you make the omelette mixture.
  3. To make the omelette mixture, combine the water with the potato starch in a bowl or measuring cup and mix until no lumps are present. Next, add a pinch of salt and the eggs. Stir until the mixture is uniform and combined.
  4. Add a little bit of oil to the frying pan while still on the heat. It helps to use some kitchen roll to spread the oil. Be careful, as the pan is hot. Wait about 10-15 seconds until the oil is heated.
  5. Now to make 4-6 omelettes. First pour in a little of the egg mixture and carefully cover the frying pan until thinly spread. Wait about 30-45 seconds until bubbles start to form on the surface. Remove from the heat and flip the omelette carefully onto the other side. Allow to cook on the still hot pan for about 15 more seconds. Then remove from the pan.
  6. Repeat the previous step until all the egg mixture has been used and you have 4-6 omelettes.
  7. Now to make our parcels. Take one omelette and lay on a flat clean surface. Take about one fourth to one sixth of the sushi rice, depending on the amount of omelettes made, and form into a small ball in your hands. Place the ball of rice in the middle of the omelette. Next, roll the omelette to cover the rice making a tube as the final shape. Next, fold the open sides of the tube underneath the wrap to make a square parcel. Take some blanched mitsuba or nori seaweed strips if available and wrap or tie around the parcel if you can. Serve these during hanami or during children’s day for a fun, tasty and festive treat.

Tips and Information

If you don't have any mitsuba leaves available, feel free to simply top the parcels with nori seaweed flakes or sesame seeds.
