Try a unique take on the Italian pasta with this Japanese style pasta with burdock and miso sauce. The Japanese style pasta, or wafuu pasta, is a popular Japanese dish that combines pasta with sauce using Japanese ingredients. This particular wafuu pasta uses burdock root, miso, bacon and butter for the sauce, making this fusion exceptionally delicious.

Ingredients

300g pasta
60g burdock root
80g tenderstem broccoli
5 rashers bacon
4 tbsp white miso paste
2 tbsp mirin
2 tbsp sake
1 tsp soy sauce
1 ½ tsp sugar
1 tbsp water
20g butter or margarine
pinch of black pepper
shichimi assorted chilli powder (optional)

How To Prepare

  1. Mix the miso paste, mirin, soy sauce, sake, sugar and water together in a bowl and set aside.
  2. Scrub or peel the burdock root, cut into matchsticks and soak in water for 3-5 mins.
  3. Cut the bacon to half-inch wide lengths. Rinse the tenderstem broccoli.
  4. Boil some water in a large saucepan and cook the pasta according to package.
  5. Heat the butter with some oil in a frying pan until melted. Add the well-drained burdock, tenderstem broccoli, and bacon to the frying pan and cook until the bacon is cooked through.
  6. Add the miso mixture to the pan and mix until the bacon and vegetables are evenly coated.
  7. When the pasta is ready, reserve some cooking water and drain.
  8. Add the pasta with 1-2 tbsp of the cooking water and some black pepper to the frying pan. Stir well.
  9. Turn the heat off and serve with shichimi chilli powder if you desire some heat.
